  • 1lb. wild salmon fillets
  • Salt
  • Black pepper
  • 2 Tbs. Olive oil
  • 1 red bell pepper
  • 1 yellow bell pepper
  • ½ lb. red potatoes
  • Green onion

For the salmon, place the salmon fillets on a piece of aluminum foil. Drizzle salt, pepper, and 1Tbs. oil on top of salmon to taste. Bunch foil on top and place salmon on grill. Let cook for about 6-8 minutes or until salmon is slightly flaky. Remove. For peppers and onion, remove seeds from peppers and cut into strips or chunks, depends on preference, and chop onion. Heat oil in a large skillet or pan over medium heat. Add bell peppers and onion, season with salt and pepper. Cook, stirring occasionally until peppers are tender, about 10 minutes. For potatoes, chop into chunks and place in a large saucepan. Add enough water to cover tops of potatoes. Add ½ to 1 tsp. salt to water. Cook over a high heat and bring water to a boil. Reduce heat to medium low or ow. Cover with a lid and gently boil water until tender, about 10 minutes. Serve salmon and vegetables together.
