  • 1 Tbs. Lemon Zest
  • 1/4 C. Olive Oil
  • 1/4 C. Fresh Rosemary Leaves, finely chopped
  • 1 Tbs. Minced Garlic
  • 1 Tbs. Kosher Salt
  • 1 tsp. Ground Black Pepper
  • 8 lb. Bone-In Half-Ham, trimmed
  • 2 Tbs. Unsalted Butter, softened
  • 2 tsp. All-Purpose Flour
  • 1/8 C. Lemon Juice
  • 1/2 C. Low-Sodium Chicken Broth
  • 1 Tbs. Orange Marmalade

In a food processor or blender, pulse together the lemon zest, olive oil, rosemary, garlic, salt, and pepper until a coarse paste forms. Rub this paste into all sides of the ham. Let ham sit for ten minutes, then place on the bottom of a large crockpot. In a small bowl, mash together the butter with the flour until a thick paste forms. In a medium saucepan over medium-high heat, whisk together the lemon juice, chicken broth, and orange marmalade along with 1/8 cup of water. Gradually whisk in the butter paste until it has dissolved and the sauce is warmed through and thickened. Gently pour the sauce over the ham, taking care not to wash off the rub. Cook on low for 6-8 hours, using a turkey baster every hour to drizzle the ham with the sauce, until a thermometer inserted into the ham registers 145 degrees.
