  • 4 cloves garlic, pressed
  • 1 onion, chopped
  • 1 (2-3 lb.) pork shoulder roast
  • 2 T. olive oil
  • 2 T. oregano
  • 2 tsp. paprika
  • ½ tsp. crushed red pepper flakes
  • Juice of 2 lemons
  • 1 T. red wine vinegar
  • ½ cucumber, peeled and diced
  • 2 C. plain Greek yogurt
  • 4 tsp. minced garlic
  • 2 T. dried dill
  • 2 T. lemon juice
  • Salt and pepper to taste

In a skillet, heat oil and sear all sides of pork roast until browned and caramelized. In a greased crockpot, add garlic and onion; Place seared pork roast on top. Season with oregano, paprika, and crushed red pepper flakes. Pour in juice of 2 lemons, red wine vinegar, and 1 to 2 cups of water. Cook on high for 4 to 6 hours until tender. In a food processor, combine cucumber, yogurt, garlic, dill, lemon juice, salt, and pepper until smooth. Assemble gyros on warm pita bread with fresh vegetables and drizzle on sauce.
