  • 4 zucchinis
  • 2 Tbs. olive oil
  • 2 C. cherry tomatoes, halved
  • ΒΌ C. water
  • 1 tsp. salt
  • 1 tsp. black pepper
  • 2 Tbs. crumbled feta cheese

Place each zucchini in a spiraler until all of zucchini is used. Repeat for each zucchini. In a large skillet, heat olive oil over medium heat. Add cherry tomatoes and cook for 2-3 minutes. Add in zucchini and cook for an additional 1 minute in oil. Add water, salt and pepper. Cook for an additional 5-7 minutes. Remove from heat and place on a plate. Sprinkle crumbled feta over the top. Serve.
