  • 1 1/2 tsp. coarse salt
  • 1 1/2 cups couscous
  • 5 tablespoons extra-virgin olive oil, plus more for drizzling
  • 1/4 cup fresh mint leaves, minced
  • 2 tbsp. chives, chopped
  • 1/3 cup golden raisins
  • 3 tbsp. lemon zest,
  • 1/4 cup almonds slivers, toasted
  • 2 tbsp. fresh lemon juice

In a large pot, bring salted water to a boil. Add in the orzo and raisins. Cook until the orzo is cooked, about 9-10 minutes. Drain and mix about 1 tbsp. olive oil to coat. Spread onto a baking tray and cool in the fridge for 15 minutes. Gently mix in the mint, salt, rest of the oil, chives, zest, almonds. Serve at room temperature.
