Ingredients

  • 1 1/2 C. dried large lima beans
  • 1 C. cucumber, diced
  • 1 C. tomatoes, diced
  • 1 C. green bell pepper, thinly sliced
  • 1 C. red onion, thinly sliced
  • 1/2 C. cilantro, minced
  • 4 garlic cloves, mashed
  • 2 tsp. salt
  • 1/4 C. lemon juice
  • 4 tsp. sherry vinegar
  • 2 tsp. whole grain Dijon mustard
  • 1/3 C. oil
  • black pepper

Directions

Rinse the lima beans and put them in a medium saucepan. Cover the beans with approximately 3 cups of hot water and boil over a medium heat for 2 minutes before removing from heat, covering, and letting it sit for 1 hour. Drain the beans and then add 4 cups of hot water and boil again. Lower the heat to a simmer and simmer for 45 minutes partially covered. Drain the beans and set aside. In a large bowl, mix the drained and cooled lima beans with the tomato, pepper, onion, cucumber, and cilantro. In separate small bowl, mash the garlic and salt together before whisking in the lemon juice, vinegar, oil, and mustard. Season to taste with the pepper. Add the dressing to the vegetable mixture and toss. Refrigerate for at least 1 hour before serving.
