  • 1 pkg. refrigerated pizza dough
  • cornmeal, for the pizza peel
  • oil, for brushing
  • 5 oz. fresh mozzarella, sliced thin and cut into 2-in. pieces
  • 1 1/2 ripe tomatoes, cut into 1/4-in. slices
  • 8-10 fresh basil leaves, torn
  • pepper, optional

Put the oven rack in the bottom third of the oven and place the pizza stone on it. Preheat the oven to 550 degrees. Sprinkle the pizza peel with cornmeal evenly. Shape the dough into a 12-in. circle and put it on the pizza peel. Brush the dough with oil and arrange the mozzarella and tomatoes evenly over the dough, leaving a 1-in. border. Slide the pizza off the peel and onto the stone and bake for 8 to 10 minutes. Remove the pizza from the oven and sprinkle with the basil. Let it stand for 3 minutes and sprinkle with pepper, if desired.
