  • 1lb ground beef
  • 1½ cups frozen peas
  • 2 cups spinach
  • 2lbs fresh mozzarella, thinly sliced
  • 1 box lasagna noodles
  • 1 cups mozzarella cheese, shredded
  • 2 tablespoons dried parsley
  • 1 jar meatless spaghetti sauce
  • 1 tablespoon olive oil
  • 3 tablespoons Italian breadcrumbs
  • salt
  • pepper

In a bowl, combine the meat, parsley, breadcrumbs, salt and pepper. Mix to combine well and shape small meatballs. In a skillet, heat the oil and brown the meatballs on all sides. Add half of the sauce into the bottom of the crockpot and then a layer of lasagna noodles. Top with fresh mozzarella slices meatballs, peas and spinach leaves. Continue the layers until ingredients run out. Top with remaining sauce and shredded mozzarella. Cook on low for 4 hours.
