  • ½ C. onion, diced
  • 1 C. mushrooms, sliced
  • ½ C. zucchini, thinly sliced
  • 1 T. olive oil
  • 4 eggs
  • 2 T. milk
  • ½ C. mozzarella cheese, shredded
  • Salt and pepper to taste
  • Fresh rosemary

In a skillet, heat oil and sauté onion, mushrooms, and zucchini until tender. In a bowl, whisk together eggs, milk, cheese, salt, pepper, and rosemary. Stir in sautéed mixture and transfer to your greased crockpot. Cook on low for 1 ½ hours until an inserted knife comes out clean.
