  • 2 Medium Red Bell Peppers
  • 2 Medium Yellow Bell Peppers
  • 1/4 C. Olive Oil
  • 1/2 Small Red Onion, sliced
  • 1/4 C. Chives, chopped
  • 1 Tbs. Lemon Juice
  • 1/2 C. Feta Cheese, cubed
  • Sea Salt, to taste
  • Ground Black Pepper, to taste

Preheat oven to 375 degrees. Place the red and yellow bell peppers in a 9x13" baking dish. Drizzle the peppers with the olive oil. Bake for about 30 minutes until tender. Reserve the oil that the peppers cooked in for the salad. When peppers are cool enough to handle, chop them up into bite-sized pieces. Combine the peppers and reserved oil in a large serving bowl. Add the red onion, chives, and lemon juice, and toss until fully combined. Sprinkle the salad with feta, and season with salt and pepper as needed before serving.
