Pesto sauce is tasty with any kind of noodles, fish or chicken. Here is a recipe that combines the delicious taste of pesto sauce with raw vegetables to make a new kind of pasta.

  • 2 C. fresh basil leaves
  • ½ C. olive oil
  • ¼ C. pine nuts
  • 2 garlic cloves, minced
  • ½ of a lemon
  • ½ C. Parmesan cheese, grated
  • Salt
  • Pepper
  • 4 sweet treat tomatoes
  • 2 zucchinis, green

First begin by making the pesto sauce. Place all of the ingredients into a food processor except the oil. Pulse together. Start to add the oil slowly, pulsing continuously until you have a smooth paste. Next, shred the zucchini into noodle shapes. Using a box grater, run it along the zucchini to get long noodle like shapes. Place the shredded zucchini into a bowl, top it with pesto sauce and 4 tomatoes.
