Fresh Rosemary French Fries
- 3 med. Yukon Gold potatoes
- 1 Tbs. freshly chopped rosemary
- 1/8 tsp. freshly ground pepper
- 1/8 tsp. sea salt
- 1 Tbs. grape seed or olive oil
- cooking spray
Preheat the oven to 425 degrees. Place large non-stick baking sheet on middle rack in oven. Prepare potatoes by washing well and patting dry. Leaving skin on, cut potatoes lengthwise then slice into long strips, about 1/8-inch in diameter. Place in medium sized bowl; add rosemary, salt and pepper. Toss well, then add grape seed or olive oil and toss again until well coated. Remove baking sheet from oven and spray with cooking spray, place potato slices on baking sheet, spreading evenly. Place into the oven for 15 minutes. Check them periodically, once they start turning golden brown, gently turn them over and bake for an additional 10-15 minutes, until golden and cooked through. Serve warm with your favorite burger.
