  • 1 lb. shrimp, veined
  • 1 ear of corn, chopped
  • 1 cup arugula
  • ½ cup cherry tomatoes
  • 1 tbsp. oregano
  • 1 tbsp. black pepper
  • 3 tbsp. extra virgin olive oil

Combine arugula, cherry tomatoes, and corn in a bowl
Pour in 2 tbsp. of olive oil in the bowl with veggies
Toss to coat vegetables
Place pan over high heat
Pour rest of olive oil on pan
Place shrimp on pan
Sprinkle shrimp with pepper and oregano
Cook shrimp for about 8 minutes
Serve shrimp over salad
