Fresh Shrimp Salad With Strawberries & Avocados

- 1 lb. frozen shrimp, peeled and deveined
- ½ tsp. salt
- 1 Tbs. olive oil
- 1 package mixed green salad
- 1 C. halved strawberries
- 1 avocado, sliced
- 1 lemon
- Dressing of your choice
To thaw the shrimp, place them in a colander. Run cold water over them for 5-7 minutes, tossing occasionally. Heat oil in a skillet over medium-high heat. Once hot, add shrimp. Sprinkle salt on shrimp. Cook for 5-6 minutes. Drain from skillet and set aside.
Divide greens onto 4 plates or bowls. Place shrimp, strawberries and avocado slices on salad. Squeeze lemon juice over each salad. Toss in dressing of your choice and serve.
