Pasta is made fresh and delicious with cherry tomatoes and sautéed shrimp! Cook the linguine until al dente and serve this tasty copycat with plenty of basil leaves.

  • 1 1/2 lb. medium shrimp, peeled and deveined
  • salt and pepper, to taste
  • 6 tsp. olive oil
  • 2 garlic cloves, minced
  • 1 can diced tomatoes, in juice
  • 1 pt. cherry tomatoes, halved
  • 1/2 lb. linguine
  • 1 C. packed fresh basil leaves, chopped

Season the shrimp with salt and pepper. Heat 4 teaspoons oil over high and add the shrimp. Cook until opaque for about 3 minutes and transfer to a bowl. Make the sauce by adding oil to the same skillet and cooking the garlic about 30 seconds. Add the canned tomatoes with 2 cups of water. Bring to a boil then simmer for 15 minutes. Remove from the heat and add the cherry tomatoes. Meanwhile, boil the pasta according to the directions and drain. Add the tomato sauce, shrimp, and basil to the pasta and toss to combine.
