  • ½ C. ricotta cheese
  • 1⁄2 C. Parmesan cheese, shredded
  • 1 C. parsley
  • 2 C. breadcrumbs
  • 1⁄2 C. egg
  • 1 fresh garlic clove, minced
  • 1⁄4 tsp. salt
  • 1⁄4 tsp. pepper
  • ¼ tsp. paprika
  • Pam cooking spray

Begin by preheating an oven to 400 degrees F. Using a food processor chop spinach in three batches. In a bowl mix spinach, breadcrumbs, parsley, ricotta, Parmesan, egg, garlic, salt, paprika, and pepper. Form into patties and place on a lightly greased broiler baking sheet. Bake for 20 minutes.
