  • 5 oz. baby kale
  • 5 oz. baby spinach
  • 1 cucumber, sliced
  • 2 medium tomatoes, chunked
  • 1 (6 oz.) can Kalamata olives, halved
  • ½ red onion, julienned
  • 3 oz. feta cheese, crumbled
  • ½ C. pomegranate
  • ½ C. mandarin oranges
  • Dressing
  • 2 Tbs. fresh lemon juice
  • 4 Tbs. olive oil
  • 2 Tbs. feta cheese, crumbly
  • ¼ tsp. Greek seasoning
  • 2 tsp. Red wine vinegar
