Need lunch in a flash? This crisp spinach topped with a delicious poached egg is just for you. If you prefer your yolks to be firm, simmer eggs for an additional minute. Serve with your favorite salad dressing!

  • ½ pound fresh spinach
  • 2 tbs. distilled white vinegar
  • 4 large cage-free eggs
  • 2 radishes, sliced

Combine spinach and radishes in a large serving bowl. Evenly divide salad into 4 serving bowls.

Fill a 4-quart saucepan ½ full with water. Mix in white vinegar and bring mixture to a light simmer. Crack each egg into a small teacup. Add 1 egg into simmering mixture and gently stir using a slotted spoon. Repeat steps with remaining 3 eggs. Simmer for 2 minutes.

Top each serving bowl with a poached egg and serve.
