Fresh and light, using ingredients from the Farmers Market.

  • 1 C. fresh peas
  • 1 bunch arugula leaves
  • Fresh mint, sliced into slivers
  • Shaved Parmesan
  • raw almonds, chopped
  • extra virgin olive oil
  • Kosher salt and fresh ground pepper, to taste

Blanch peas in boiling water for 10 seconds and rinse with ice cold water. In a bowl, assemble greens, toss with oil and sprinkle with salt and pepper. Plate greens and top with cheese and almonds.
