Ingredients
- 4 med. tomatoes, chopped
- 1 med. mango, peeled and chopped
- 1 med. ripe avocado, peeled and cubed
- 3/4 C. fresh or frozen corn, thawed
- 1/2 C. minced fresh cilantro
- 1/2 C. canned black beans, rinsed and drained
- 1/4 C. chopped red onion
- 1 jalapeno pepper, seeded and chopped
- 3 Tbs. lime juice
- 1 Tbs. olive oil
- 2 garlic cloves, minced
- 1/4 tsp. salt
- Baked tortilla chips
Directions
In a large bowl, combine the first 12 ingredients. Chill until serving. Serve with tortilla chips.
