These quick and easy mini pizzas can be made for a party full of finger foods or just a night where you need a small bite to appease your craving! Garnish with extra ripe cherry tomatoes and more cheese.

  • 1 (14 oz.) tube refrigerated pizza dough
  • 1 T. olive oil
  • 12 oz. cherry tomatoes
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • ¼ tsp. crushed red pepper flakes
  • 1 C. mozzarella cheese, shredded
  • ¼ C. basil, chopped

Preheat oven to 425 degrees. Divide dough into 4 portions and shape into mini pizzas. In a skillet, heat oil and sauté tomatoes until skins begin to char and full tomatoes begin to break down; season with salt and pepper. Remove from heat and transfer to a bowl; mix in garlic and crushed red pepper flakes. Spoon sauce onto mini pizzas, top with cheese and basil, and bake for 20 minutes until golden and crisp.
