  • 16 oz. spaghetti, cooked and drained
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 (28 oz.) can crushed tomatoes
  • ¼ C. basil leaves, finely chopped
  • 1 T. lemon juice
  • Salt and pepper to taste
  • 2 eggs
  • ½ C. Parmesan cheese, divided
  • ½ stick butter, melted

Preheat oven to 350 degrees. In a large saucepan, heat oil and sauté onion and garlic until softened. Add crushed tomatoes, basil, lemon juice, salt, and pepper. Bring to a simmer and stir occasionally for about 5 to 10 minutes. In a bowl, whisk together eggs, half of the Parmesan, and melted butter. Toss in spaghetti and coat evenly. Transfer to a greased baking dish and pour in tomato basil sauce. Once mixed, top with remaining Parmesan, bake for 20 to 25 minutes until bubbly, and serve.
