  • 3 large tomatoes, sliced
  • 1 cup mozzarella cheese, shredded
  • 2 lbs. ham
  • 4 eggs
  • 1 tsp. parsley, minced
  • 2 tbsp. milk
  • Salt, to taste
  • Pepper, to taste

Place a pan over medium heat
Sauté onions, ham, and tomatoes for about 5 minutes
Combine all ingredients in a bowl. Whisk well
Pour into a crockpot and sprinkle with cheese
Cover and cook for about 2 hours on low or until eggs have set
