Fresh Tomato Herb Soup

Use fresh tomatoes instead of canned ones and you'll really taste the difference!

Serving Size / Yield

6-8 servings

Ingredients

  • 1/4 C. olive oil
  • 2 med. onions, sliced
  • 6 fresh medium tomatoes, peeled, cored, and chopped
  • one 6-oz. can tomato paste
  • 3-4 Tbs. fresh basil
  • 2 Tbs. fresh parsley
  • 2 Tbs. fresh thyme
  • fresh dill, to taste
  • 1 clove garlic, minced
  • 4 C. chicken broth
  • salt and pepper, to taste

Directions

Saute onions in olive oil until tender and translucent.  Add tomatoes, tomato paste, broth, fresh herbs, and spices.  Bring to a boil.  Reduce heat.  Cover and simmer for 40 minutes.  Puree soup in a blender or food processor, a small amount at a time.  Serve.
