Fresh Tomato Herb Soup

Ingredients
- 1/4 C. olive oil
- 2 med. onions, sliced
- 6 fresh medium tomatoes, peeled, cored, and chopped
- one 6-oz. can tomato paste
- 3-4 Tbs. fresh basil
- 2 Tbs. fresh parsley
- 2 Tbs. fresh thyme
- fresh dill, to taste
- 1 clove garlic, minced
- 4 C. chicken broth
- salt and pepper, to taste
Directions
Saute onions in olive oil until tender and translucent. Add tomatoes, tomato paste, broth, fresh herbs, and spices. Bring to a boil. Reduce heat. Cover and simmer for 40 minutes. Puree soup in a blender or food processor, a small amount at a time. Serve.
