Fresh Tomato Mozzarella Salad Italiano

This simple, fresh salad is full of flavor, is easy to prepare, and is perfect for a potluck or picnic. It was developed to showplace the bounty of the home garden but works just as well with store-bought ingredients. I have served it at numerous parties and get-togethers and it is always a favorite and beautiful to look at, too!

  • 2 C. chopped fresh Roma or other tomatoes (approximately 6)
  • 1 16-oz. container fresh mozzarella balls, small
  • 2 avocadoes, coarsely chopped
  • 5 Tbs. chopped fresh basil
  • 1 Tbs. chopped fresh mint
  • 1 Tbs. chopped fresh Italian parsley
  • 4 Tbs. olive oil
  • 4 Tbs. lemon juice
  • salt and pepper to taste

Drain fresh mozzarella. Cut small mozzarella balls in half. If only large fresh mozzarella is available, cut into pieces the size of a grape. Place mozzarella, tomatoes, avocados, basil, mint, and parsley in large mixing bowl. In a separate bowl, whisk together olive oil and lemon juice until combined. Add salt and pepper to taste. Drizzle dressing over tomato mixture and gently toss. Chill until serving time.
