  • 1/4 C. olive oil
  • 1 1/2 Tbsp. chopped garlic
  • 5 C. chopped fresh tomatoes
  • 1 lb. penne pasta
  • 1/2 C. shredded basil
  • 1 C. shredded mozzarella
  • 1/2 C. grated Parmesan

Boil the pasta until al dente. Meanwhile, make the sauce by heating the olive oil in a skillet. Add the garlic and cook about 1 minute. Add the tomatoes and cook for 5 minutes. Drain the pasta and add it to the pan. Put in the basil and toss to combine. Season with salt and pepper to taste. Top with the cheeses, cover, and simmer for 10 minutes until it is melted.
