  • 1 Tbs. olive oil, divided
  • 1/2 tsp. salt, divided
  • 1/4 tsp. cayenne pepper
  • 2 large green bell peppers, diced
  • 1/2 C. sliced green onions
  • 2 tsp. finely chopped garlic
  • 2 tsp. ground cumin
  • 4 C. fresh tomatoes, diced

In a large skillet, heat the oil over medium-high heat. Add bell peppers, green onions, garlic, cumin, salt and cayenne pepper. Cook and stir until vegetables are just tender, about 5 minutes. Stir in tomatoes and cook until just heated through.
