A healthy and light dish that could be used for an appetizer or a salad.

  • 4 large fresh tomatoes
  • 1/2 red onion, sliced very thinly
  • 2 garlic cloves, minced
  • 6 fresh basil leaves, layered, rolled and sliced
  • 2 Tbs. pine nuts
  • Parmesan cheese, grated
  • 3 Tbs. olive oil
  • Freshly ground black pepper

In a serving dish or on a platter, arrange the tomatoes, alternating with the onions. Sprinkle the garlic over the tomatoes and onions. Next top with the basil, pine nuts, and cheese. Drizzle the oil over all and season with the pepper. Allow to stand for about an hour to blend flavors.

Yield: 4 Servings.
