- 10-12 small tomatoes, sliced
- 1/2 C. spinach
- 8 eggs
- 2 C. mozzarella
- 2 C. cheddar cheese
- 1 3/4 C. milk
- 1/2 tsp. salt
- 1/4 tsp. pepper

Directions
Preheat the oven to 350 degrees. In a baking dish, mix the cheeses and lay the tomato slices and spinach on top. In a separate bowl, mix the eggs, milk, salt, and pepper together. Pour egg mixture into baking dish and bake for 35 to 40 minutes.
