This delicious linguine features fresh tomatoes, basil, and a light olive oil sauce.

  • 6 ripe tomatoes, peeled, seeded, and chopped
  • 1 clove garlic, minced
  • 1 C. loosely packed fresh basil, torn
  • Salt and pepper
  • 1 lb. linguine pasta
  • Pecorino Romano cheese

Mix olive oil, tomatoes, garlic, basil, salt and pepper and set aside to blend flavors. Cook pasta in boiling salted water according to package instructions. Drain pasta, toss with the tomatoes and cheese, and serve immediately!
