Lemon belongs in soups like these! It breaks up the savoriness just right without taking away from the heartiness. You can substitute the spinach for chopped kale and the soup is just as good! The greens are definitely the understated star of this soup.

  • 4 C. chicken broth
  • 2 ½ C. turkey, shredded
  • 2 lemons, juiced
  • 2 carrots, peeled and chopped
  • 1 medium yellow onion, finely chopped
  • 1 Tbs. olive oil
  • 1 tsp. garlic, minced
  • ¾ tsp. dried basil
  • 2 C. baby spinach, chopped
  • Salt and pepper

Heat a large saucepan to medium-high with the olive oil. Add in the onion, carrots, and garlic and let it saute for 5-7 minutes until they began to get tender. Add the basil, salt and pepper, and lemon juice and stir. After a few minutes, pour in the chicken broth and add more salt and pepper if needed. Bring the broth to a boil and lower it to a simmer for 25 minutes. Add in the shredded turkey and spinach and let it cook for 5-7 minutes and serve!
