Ingredients

  • 1 ½ C. quick-cooking brown rice
  • 3 C. water
  • 1 T. peanut oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 3 green onions, thinly sliced
  • 2 T. soy sauce (or more to taste)
  • 1 C. fresh peas
  • 2 tsp. sesame oil
  • 2 carrots, peeled and chopped
  • 2 eggs, beaten

Directions

In a saucepan, bring water to a boil, add rice, reduce heat, cover, and simmer for 20 minutes. In a large skillet, heat peanut oil and sauté onion, garlic, and carrots until tender. Push vegetables to the side, add eggs, and cook until firm. Add in rice and mix well to combine. Stir in peas, soy sauce, and green onions. Heat for an additional minute and serve.
