Forget takeout and throw together your own fried rice that doesn't rely on frozen vegetable! The best part about this dish is that you can add as many fresh veggies into the mix (like broccoli) and still have a simple and tasty side dish.

  • 1 ½ C. quick-cooking brown rice
  • 3 C. water
  • 1 T. peanut oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 3 green onions, thinly sliced
  • 2 T. soy sauce (or more to taste)
  • 1 C. fresh peas
  • 2 tsp. sesame oil
  • 2 carrots, peeled and chopped
  • 2 eggs, beaten

In a saucepan, bring water to a boil, add rice, reduce heat, cover, and simmer for 20 minutes. In a large skillet, heat peanut oil and sauté onion, garlic, and carrots until tender. Push vegetables to the side, add eggs, and cook until firm. Add in rice and mix well to combine. Stir in peas, soy sauce, and green onions. Heat for an additional minute and serve.
