  • 4 potatoes, peeled and chopped
  • 2 C. chicken, cooked and chopped
  • 1 T. olive oil
  • ½ onion, diced
  • 1 yellow bell pepper, chopped
  • Salt and pepper to taste
  • 2 cloves garlic, minced
  • 1 C. chicken broth

Preheat oven to 375 degrees. In a skillet, heat oil and sauté onion, garlic, and bell pepper until tender. Season with salt and pepper and transfer to a greased baking dish. Add in chicken, potatoes, and broth. Cover and bake for 30 to 40 minutes until potatoes are tender.
