My mom was the best, my friend. I really miss her. She died in 1995, 3 days before Mother's Day. She was laid out on Mother's Day - a Mother's Day I'll never forget. Love ya mom xoxoxoxoxo.

  • 1 can salmon, clean
  • 1 egg
  • Italian bread crumbs

Directions

Combine salmon and egg. Add bread crumbs until texture is pasty. Form into burgers and fry in pan. When cooked through, pour over noodles and stewed tomatoes.

  • Pour over noodles? But they are salmon cakes. The recipe seems too vague.
    A can of salmon. What size? Breadcrumbs and an egg. What about spices, salt and pepper? Maybe some herbs?

  • I always use corn meal instead of crumbs for my salmon cakes or croquettes as we always called them. I also add a tablespoon of baking powder to them so they are a little lighter. The hot sauce is good too.

  • I spice up my Salmon Cakes with the following: garlic & onion powder,egg ,hot sauce to taste, 1tsp. or so of dijon mustard,1 or 2 tbs.mayo, onions, green peppers,bread crumband finally a light-roll in panko crumbs. I serve with cole-slaw ,broccoli, and oven fried potatoes or mashed potatoes.

  • My family recipe calls for garlic powder mixed in with the salmon, egg and bread crumbs, but the really special part, is the thinly sliced onions fried along side the salmon patties. She (and I) served it with mashed potatoes and buttery corn kernels...also from a can.

  • Very basic but boring. Why not spice it up a bit with lemon pepper seaoning, a bit of green onion, and certainly some fresh dill

  • My mother who I miss much also taught me salmon egg onion cracker crumbs,with fried potatoes and applesauce.Which I have always ate with each bite of salmon.

  • My mother also made (as well as I do now) with the egg, onion and crackers crumbs always served with fried potatoes and baked beans! Talk about Southern Dish!!

  • I think Deb was trying to say that the salmon patties were served with noodles and stewed tomatoes on the side. Not everyone has the same side dishes. I serve macaroni and sweet peas with mine.

  • My mother taught me how to make salmon cakes by using canned red sockeye salmon (always), 1 egg, 1 onion and bread crumbs. We're southern so we like to serve the salmon cakes with stone ground grits made with chicken broth and heavy cream instead of water, Yum! I don't get the noodles/tomatoes thing, either!

  • I am confused! On the ingredients list, nothing is mentioned about noodles or stewed tomatoes. Does it mean you pour the tomatoes and noodles over the salmon patties????
