Fried Avocado Dippers with Chipotle Sauce

- 1/2 C vegetable oil
- 2 eggs
- 1 C breadcrumbs
- 1/2 C flour
- 2 avocados, halved, peeled, seeded and sliced
- Chipotle sauce, for dipping
Heat oil in skillet.
In one bowl, beat the eggs. In a second bowl, add breadcrumbs. In a third, place flour.
Sprinkle the avocado slices with salt, if needed. First cover avocado slice in the flour and shaking off the excess. Dip the avocado slices into the eggs and cover completely. Finally, cover slice completely with breadcrumbs.
Drop the avocado slices, 4 to 5 at a time, into the hot oil. Cook for 3 to 4 minutes, or until the avocado slices are golden brown.
Serve warm and pair with chipotle sauce for dipping.
