  • Croquette:
  • 2 lb. ground chicken
  • 1/3 C. white onion, diced
  • ½ C. whole milk
  • 2 T. fresh dill, chopped
  • 3 T. butter, melted
  • 2 eggs
  • Salt
  • Pepper
  • Breading:
  • 2 eggs, beaten
  • 1 C. bread crumbs
  • Olive oil

In a bowl, mix together all of the diced and chopped croquette ingredients. Mix in an hand mixer. In a small bowl, beat the eggs. Pour the bread crumbs on a plate. Prepare a skillet with the olive oil, let it heat up. Roll the croquette mixture into balls and flatten them with your hands. Place them in the eggs, bread crumbs and into the bread crumbs, in that order. Place prepared croquette into the hot oil. Cook on both sides. Repeat process with remaining croquettes. Serve and enjoy.
