Ingredients

  • 1 1/2 lbs. cod fillets
  • 1/2 C. flour
  • 1 egg, lightly beaten with 1/2 tsp. salt and 1/2 tsp. pepper
  • 1/2 C. bread crumbs
  • 1 C. olive oil

Roll fillets in flour. Dip in egg mixture and roll in crumbs. Fry in hot olive oil until golden brown on each side.
