These Irish corn beef cakes are deceptively easy to make. They’re soft and crispy on the outside with the bold flavors of corn beef inside. These are great served with a cream or topped with cool green onions.

  • 1 lb. russet potatoes, peeled and diced
  • 1 lb. russet potatoes, peeled and grated
  • 1 C. corn beef, cooked and shredded
  • ¼ C. whole milk
  • ⅓ C. flour
  • 3 Tbs. unsalted butter
  • 1 egg
  • Salt and pepper

In a saucepan boil half if the potatoes until they’re tender, then drain and mash them. Grate the other half of the potatoes and combine them with the flour, milk, egg, salt, pepper, and corned beef. Mix in the mashed potatoes and eggs and form patties. Using the butter, heat a large skillet and cook the patties in turns. Cook each about 5 minutes on each side, until they’re golden brown.
