Fried Cucumbers
Ingredients
- 3 medium sized cucumbers
- 1 - 1/2 C. self-rising flour
- 1/2 C. vegetable oil
- Salt & pepper to taste
Directions
You can either use the skin on, or remove the skin on the cucumbers; slice them 1/2 to 2/3 inch. Preheat your oil until it reaches that real faint boil looking stage, about 350 degrees. Roll the Cucumber slices in the flour and gently place them in hot oil in skillet. Brown lightly on each side, Put on paper towel lined plate or platter. You can use more or less cucumbers according to how many you want to serve. The above recipe will serve 3 to 4 people. This tastes a whole lot like Green Fried Tomatoes, but you will be able to taste the definitive Cucumber taste as well. Bon Appetit!
