Fried Cucumbers

A recipe for those who like cucumbers but get indigestion from raw ones. I prefer this recipe to fried squash.

Ingredients

  • 2-3 med. or lg. cucumbers
  • 1/2 pt. buttermilk
  • 2-3 Tbs. Worcestershire sauce
  • 1 dash fresh or reconstituted lime or lemon juice
  • 1/2 - 1 C. all-purpose flour
  • 1/4 tsp. salt
  • 1/4 tsp. black pepper
  • 1 dash ground red pepper (optional)
  • cooking oil

Directions

Peel and slice the cucumbers into round slices. Add lime juice and Worcestershire sauce one teaspoon at a time to buttermilk, stirring until it turns a pale beige color. Add salt and pepper to flour and mix well. Dip cucumber slices into buttermilk mixture and coat with flour mixture. Set stove burner to medium heat (325-350 degrees F). Cover bottom of skillet in cooking oil and fry breaded cucumber slices until brown on each side, turning slices only once. Do not stack cucumber slices on top of each other as they will stick together.
