Fried Eel

Ingredients
- 3 lbs. eel, cut into 2-inch pieces
- 1 C. flour
- 1 C. olive oil
- 1 lemon, cut in quarters
Directions
Roll eels in flour and fry it hot oil until brown on both sides. Should take about 30 minutes total. Remove, drain on paper towel and sprinkle with a little salt and serve with lemon.
