  • 2 T. butter, unsalted
  • 2 onions, chopped
  • Salt and pepper to taste
  • 3 large sweet potatoes, cubed
  • ¼ C. extra virgin olive oil
  • 1 tsp. paprika
  • ½ tsp. cinnamon
  • 6 large eggs

Preheat oven to 450 degrees. In a skillet, sauté onions in butter, salt, and pepper until translucent. In a large bowl, toss sweet potatoes with olive oil, salt, pepper, paprika, and cinnamon. Add in onions and mix well. Pour sweet potato mixture into a baking dish and bake for 30 to 40 minutes. Remove from oven, crack eggs either on top of sweet potatoes, or make small spaces for them to settle into. Return to the oven and bake for an additional 15 to 20 minutes until eggs are cooked to your preference.
