  • Fish:
  • 4 tilapia fish filets
  • 1/2 tsp. salt
  • 2 eggs whites
  • 1 1/2 C. crushed tortilla chips
  • ¼ tsp. cumin
  • Sauce:
  • 1/3 C. light mayo
  • 1/3 C. light sour cream
  • 1 clove of garlic; diced
  • 1 Tbs. lime juice
  • 1 can chipotle in adobo
  • Salt
  • Pepper
  • 1/4 tsp. fresh oregano

Preheat oven to 375 and prepare a baking dish by spraying it with non-stick cooking spray. Cut fish into 2-inch fingers. In a bowl combine tortilla chips, cumin, and salt. Dip the fish sticks into the egg whites then coat them with a chip layer. Bake for 12-16 minutes or until golden brown. While the fish is baking, mix together all sauce ingredients and blend until smooth.
