Ingredients

  • 1 avocado, peeled and diced
  • ½ log of goat cheese, diced
  • 5 cups of spinach
  • 1 cup of blackberries
  • 1 cup of cooked chicken breast, diced
  • ¼ cup of walnuts
  • ½ cup of strawberries
  • ¼ cup of extra virgin olive oil
  • 4 tablespoons of apple cider vinegar
  • 2 tablespoons of honey
  • Salt and pepper, to taste

Directions

For the salad:
Brown the goat cheese for one minute in an oiled skillet over medium heat. Pat away any excess oil and set aside. Next, toss together the spinach, avocado, blackberries, and chicken in a large bowl. Top the salad with the goat cheese squares, walnuts, and the berry dressing.

For the dressing:
Combine the strawberries, olive oil, apple cider vinegar, honey, salt and pepper in a blender. Mix on medium speed until smooth and creamy. Drizzle on top of the blackberry salad and enjoy!
