  • 1 lb fresh green beans
  • ½ cup flour
  • 1 egg
  • 1 cup seasoned breadcrumbs
  • 2 cups vegetable oil

Bring a large pot of water to a boil and cook the green beans for 2 minutes, or until bright green in color. Drain and immediately transfer to a bowl of ice water to stop them from cooking further. Drain and dry the green beans on paper towels. Heat the oil in a deep pan or saucepan to 350°F. In a small bowl, whisk the egg. Pour the flour into a separate bowl and the breadcrumbs into a third bowl. Coat the beans with flour, egg and then with breadcrumbs. Fry the green beans, by groups, for 3-5 minutes, or until golden brown. Using a slotted spoon, scoop them out and place onto a paper towel lined plate to drain excess oil.
