  • 3 lb. fish fillets
  • 1 C. cornmeal
  • 1 tsp. paprika
  • 1/4 tsp. dry mustard
  • 1/2 tsp. onion powder
  • 1/2 tsp. celery salt
  • 1 tsp. lemon zest
  • 1/2 C. milk
  • Salt and pepper to taste

Mix all ingredients except for fish and milk in bowl. Dredge fish in milk and then cornmeal mixture. Heat oil in frying pan. Place fish in pan. Cook fish until brown on both sides. If you desire, garnish with lemon slices.
