  • 1/2 C. flour
  • 1 egg
  • 1/2 C. milk
  • 1/2 C. panko crumbs
  • 1/2 C. grated Parmesan cheese
  • 2 T. fresh rosemary, finely chopped
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1 8-oz. pkg. cherry-sized mozzarella balls, drained
  • oil for frying
  • 1 pt. cherry tomatoes
  • 1 large cucumber, peeled and sliced
  • handful of fresh basil

Pour flour into a small bowl. Beat together milk and egg in another small bowl. In a third bowl, combine panko, Parmesan, and rosemary. Sprinkle with salt and pepper to taste. Take each mozzarella ball and dip into the flour, egg, and panko. Return to the egg and breadcrumb for an even coating. Heat about two inches of oil into the bottom of a saucepan with high sides. Carefully fry each mozzarella ball until golden brown, working in small batches if needed. Transfer to a paper towel-lined rack to drain excess grease. Once the balls have cooled down, arrange them in a serving dish with tomatoes and cucumber. Garnish with fresh basil.
