Fried Okra
Ingredients
- 1 lb. fresh okra, cut into 1/2" pieces
- 3 Tbs. all purpose flour
- 2 egg whites
- 1-1/2 C. soft breadcrumbs(I use plain Progresso crumbs)
- vegetable oil
- 1/4 tsp. salt
Directions
combine okra & flour tossing to coat (I use a colander for this) set aside, beat egg whites in large bowl until stiff peaks form, fold okra into egg whites, stir in breadcrumbs coating okra well. Heat about 2" of oil in skillet, fry okra until golden brown, (don't over cook) drain on paper towels and sprinkle with salt. The egg white helps the breadcrumbs adhere to the okra and also makes a wonderful crust.
