  • 1 Sliced Zucchini
  • 3 Cups of of Olive Oil
  • 2 Tablespoons of Malt Vinegar
  • 1 Teaspoon of Salt
  • ½ Teaspoon of Paprika
  • 1 Cup of Flour
  • ¾ Cup of Chilled Seltzer

Begin by whisking together 2 tablespoons of the olive oil, vinegar, and ½ the salt in a small bowl and the flour, seltzer, and remaining salt in another bowl. Then, heat the rest of the oil in a deep skillet until it’s reached a temperature around 375 degrees Fahrenheit.

Toss the zucchini slices in the first bowl, dip them in the second, and fry them for about 2-3 minutes on each side. Transfer them to a paper towel to drain and enjoy!
