Ingredients

  • 2 pounds snapper, tails removed
  • seafood seasoning
  • Salt
  • Pepper
  • 2 cups of all-purpose flour
  • ¼ cup of cornmeal
  • 2 teaspoons of baking powder
  • 1 large egg, beaten
  • Vegetable oil
  • Hamburger buns
  • Mayonnaise
  • Lettuce
  • 1 thinly cut red onion
  • American cheese

Directions

Heat oven to 375°F and fill a Dutch oven halfway with vegetable oil. Cut fish into strips or a burger like shape, sprinkle with seasoning, salt, and pepper. Combine flour, cornmeal, baking powder, remaining 1 tsp. seasoning, 1/2 tsp. salt, and 1/2 tsp. pepper; stir well. Add the egg, stirring until thoroughly blended and smooth. Dip fish strips into batter, coating both sides well. Shake off excess. Fry fish, in batches, 2 minutes on each side or until golden, then drain. When done. Add all ingredients on bun and enjoy!
